Recipe for rösti sandwich with chicken and pesto dressing
Do you have vegetables you need to use up…? Or maybe you just want a healthier alternative to classic burger buns or sandwich bread? Transform your vegetables into delightful crispy rösti sandwiches!
You can use exactly the vegetables you have on hand; just grate them, mix with eggs, flour, oats, and spices to taste, shape and fry them in a pan – and you’ll have delightful rösti “bread,” which you can fill with whatever you like.
In mine, I’ve used pesto dressing, lettuce, fried chicken fillets, various vegetables, and pickled red onions. The pesto dressing is super simple and adds a delightful touch to your sandwich. The whole thing can be whipped up in just 30 minutes and is generally just a delightful mix! Enjoy your sandwich for lunch or use them for dinner – they work for everything.
Here’s the recipe as I made them, but feel free to vary the vegetables as you like.

Instructions
Rösti Sandwiches
- Peel potatoes and carrots and grate them on the coarse side of a grater. Also, grate the onion and cauliflower and put everything in a bowl.
- Add eggs, oats, flour, paprika, and salt and mix everything well together.
- Let the mixture sit for 10 minutes so that the oats bind the liquid – this ensures the rösti hold together when frying.
- Shape the rösti and fry them in a little butter until golden and crispy on both sides.
Pesto Dressing
- Mix skyr, pesto, and lime juice together and season with salt and pepper.
- Fill the rösti with the pesto and other fillings and serve
