Recipe for rocket salad with baked tomatoes, feta, and pine nuts
Here you get a really delicious, simple, beautiful, and tasty salad. It consists of arugula, spinach, roasted tomatoes, feta, and toasted pine nuts. All complemented by a simple dressing that is both sour and sweet, adding the finishing touch.
When you roast the tomatoes, the flavor becomes extra rich and intense, which pairs wonderfully with the more bitter arugula. From the feta, you get a bit of saltiness and creaminess, and the pine nuts add a delightful nutty hint.
The salad is ready in about 30 minutes and can be enjoyed as is or as a side dish to various dishes.
