
Recipe for nut cake with strawberry cream, fresh berries, and chocolate

Nut cake base with chocolate pieces topped with strawberry cream, fresh berries, and just a little more chocolate – yum!
I baked it for my colleagues today because I’m starting my summer vacation today (yes! ??) and it’s tradition to bring a little cake…
The cake is both easy and quick to make and works well both with coffee and as a fine summer dessert.
The recipe is for 6 people, and I used a Ø 22 cm pan.

Ingredients
Nut Base
- 2 pcs. Egg
- 75 gram Sugar
- 4.8 gram Baking Soda
- 50 gram Wheat Flour
- 75 gram Dark chocolate coarsely chopped
- 100 gram nuts blended e.g., almonds, hazelnuts, walnuts, etc. - use what you have
Strawberry Foam
- 200 gram Cream
- 4.2 gram Vanilla Sugar
- 50 gram Strawberry Jam creamy or blended
- 8 pcs. Strawberry fresh, cut into small cubes
Garnish
- 150 gram Berry fresh, e.g., strawberries, blueberries, raspberries, or currants
Instructions
Nut base
- Whisk eggs and sugar until fluffy.
- Fold in the remaining ingredients.
- Line a round springform pan with parchment paper and pour the batter into the pan.
- Bake for about 15 minutes in a preheated oven at 200 degrees Celsius (392 degrees Fahrenheit) (conventional), until the base is firm and golden.
Strawberry cream
- Whisk the cream until whipped cream and fold in the vanilla sugar, jam, and diced berries.
- Spread the cream on the cooled base and top with berries and chocolate - serve
