Vegetarian pasta dish with walnut cream, squash and parmesan

It takes no more than 15 minutes to whip up, and it’s actually also vegetarian, but absolutely lacks nothing in flavor. Perfect for weekdays, as comfort food on weekends, on meat-free days, and yes – even for guests.

Ingredients

  • 400 gram Pasta whole grain spaghetti
  • 50 gram Pine Nuts
  • 150 gram Walnuts
  • 10 gram Grate
  • 3 cloves Garlic
  • 27 gram Olive Oil
  • 7.5 gram Lemon Juice
  • 5 gram Flake Salt and a little freshly ground pepper
  • 300 gram Cooking Cream
  • 1 pcs. Squash coarsely grated

Topping

  • Parmesan Flakes
  • Parsley Fresh

Instructions

  • Set the pasta to boil – it should be al dente.
  • Toast the pine nuts in a dry pan, then blend them together with walnuts, breadcrumbs, garlic, olive oil, lemon juice, salt, and pepper.
  • Bring the cream to a light boil in a pot or deep pan and stir in the nut mixture.
  • Drain the pasta and mix it into the cream mixture along with the squash.
  • Season to taste and let it simmer for 3 minutes. Plate and top with parmesan and parsley.
