Truffles

Truffles are something you can easily make yourself, and it's a genius way to give new life to leftover cakes.

Equipment

  • Bowl

  • Food Processor (optional)

Ingredients

  • 350 gram cake Preferably cake leftovers of one or more types of cakes
  • 10 gram Almond Flour can be omitted
  • 20 gram jam raspberries, strawberries, or blackcurrants
  • 2.5 gram Cocoa
  • 4.2 gram Rum Essence
  • 100 gram Dark chocolate
  • Colored crumb to roll the truffles in

Instructions

  • Crumble the cake into a bowl and add almond flour, jam, rum essence, and cocoa.
  • Melt the chocolate over a water bath and remove it from the heat. Let the chocolate cool until it is lukewarm.
  • Add the melted chocolate to the cake mixture and mix everything well together.
  • Alternatively, you can put all the ingredients in a food processor and let it run until the mixture is cohesive.
  • Shape the truffle mixture into 10 truffles.
  • Pour colored sprinkles into a deep plate and roll the truffles in it.
  • Store the truffles in the refrigerator until they are ready to be eaten.

Notes

You can roll your truffles in something other than sprinkles. Try, for example, with cocoa, coconut flour, or freeze-dried raspberries.
