Spinach Wraps with Spicy Chicken Filling

Healthy, green spinach wraps with spicy chicken/cabbage filling - easy, nutritious and just super delicious.The wraps are made from eggs, spinach, gluten-free oats, and a few spices - so they're gluten-free but packed with protein and vitamins.

Ingredients

Wraps

  • 3 pcs. Egg
  • 80 gram Oatmeal you can easily use gluten-free
  • 150 gram Milk
  • 6 gram Salt
  • 1 gram Pepper
  • 200 gram Fresh spinach

Chicken Filling

  • 400 gram Minced Chicken
  • 1 pcs. Onion finely chopped
  • 2 cloves Garlic finely chopped
  • 0.5 pcs. Pointed Cabbage thinly sliced
  • 2 pcs. Carrots coarsely grated, use 3 if small
  • 1 pcs. Red bell pepper chopped into small cubes
  • 55 gram Sundried tomatoes coarsely chopped
  • 100 gram tomato sauce alternatively ketchup or blended tomatoes
  • 10 gram Paprika
  • 2 gram Chili ground
  • 6 gram Salt
  • 1 gram Pepper

Instructions

Wraps

  • Put all ingredients in a blender and blend until smooth and even batter.
  • Let it sit while you prepare the filling.

  • Sauté onion and garlic in a little butter.
  • Add the meat and let it brown.
  • Add all other ingredients and let simmer for 7-8 minutes with occasional stirring. Season to taste.
  • Cook the wraps in a pan with a little butter or coconut oil - like pancakes.
  • Put the filling on the wraps, roll together and serve.
