Easy and quick recipe for spinach pasta that doesn't require a pasta machine. If you're tired of eating regular pasta or think your kids are eating too much pasta, this is a more fun and healthier alternative.
250gramWheat FlourCan be substituted with pizza flour, durum wheat flour, or whatever you have in the drawer

Instructions
Add flour and spinach to a blender, and blend well before adding the eggs and blending for a few minutes. I used our stand mixer Monsieur Cuisine édition plus for this.
Take the dough out onto a floured surface and knead it well with the heel of your hand until you have a smooth dough. This takes about 15-20 minutes.
Let the dough rest on the countertop in a bag for 30 minutes.
Generously flour the surface, and roll the dough thin.
The dough should be rolled out to a thickness of approximately 1-2 millimeters.
Generously flour the dough.
Roll the dough onto the rolling pin and make a cut along the rolling pin.
Unfold the dough on the surface, and fold the dough on the short side.
Cut the pasta to the desired width.
Unfold the cut pasta and hang it up to dry until needed (if the pasta is to be used immediately, toss it generously in flour and let it rest on the surface while the rest of the pasta is cut into strips).
