Instructions
Spinach Pancakes
Start by blending the spinach with a little milk, either with a blender or hand blender.
Mix in the rest of the ingredients and fry about 1 deciliter of batter at a time in oil on the pan.
Set the finished spinach pancakes aside and keep them warm under a kitchen towel if necessary.
Ideally, take the meat out of the fridge half an hour before - this will make it fry easier instead of boiling.
Find a large sauté pan.
Heat the pan well and add oil.
Add the first package of chopped chicken and let it brown. Pour the meat into a bowl along with the juices, then fry the second package of meat. This way the pan retains its high temperature more easily, ensuring the meat doesn't boil. While the meat is frying, chop all the vegetables.
Add oil to the pan and add curry, letting it "burn off." This enhances the flavor.
Add the chopped vegetables and season with salt, pepper, cayenne pepper, paprika, onion powder, garlic powder, and optionally turmeric if you want a more yellow appearance.
Let it fry over medium-high heat until the vegetables become slightly soft. This takes 5-10 minutes.
Add white wine, cover with a lid, and reduce the heat.
Let it simmer for another 5 - 10 minutes.
Pour couscous into a bowl.
Add boiling water and let it sit for 10 minutes. After this, it is ready to use.
The pancakes are technically ready to eat, but I prefer to gratinate them a bit as well:
Place a pancake on the table, add 1 tablespoon of couscous (or rice), 1 ladleful of filling, and 1 tablespoon of grated cheese in the center of the pancake.
Fold the pancake by first folding two sides together, followed by the remaining two sides, creating a square pancake package.
Place the package on a baking sheet with parchment paper and repeat with the remaining pancakes. I made 14 filled pancakes from my portion, plus a bit of leftover filling, which I will use another day with a fried egg for lunch.
Place the baking sheet with the pancake packages in a preheated oven at 200 degrees Celsius (392 degrees Fahrenheit) (fan).
Let them bake for 10 - 15 minutes. Let them stand for 5 minutes before eating.
