Sauté onions and garlic in a little oil until they are soft and golden.
Add mushrooms, zucchini, and chili, turn up the heat. Stir constantly in the pot until the vegetables are delicious and roasted, then add paprika, oregano, thyme, cumin, ginger, cardamom, and bay leaves.
Stir well for about a minute so the spices "burn off", then add chopped tomatoes, vegetable bouillon, and tomato paste.
Submerge the chicken filets well into the dish so they are covered and let it simmer covered for 20-25 minutes until the chicken is tender.
The chicken can then be taken out of the pot and shredded with two forks (like pulled chicken) or cut into cubes. Then put the chicken back in the pot and season with salt and pepper.
