Salted Lemons

This recipe is super easy and tastes delightful. Use them in a salad with couscous or with fish or lamb.

Ingredients

  • 3 pcs. Lemon Organic
  • 125 gram Salt Coarse
  • Water Boiling
  • Spices Bay leaves and peppercorns

Instructions

  • Use organic lemons for this recipe to ensure they are not sprayed.Score them as if to quarter, but make sure they are still attached at one end.Rub them with coarse salt in all cracks and crevices - use about a handful of salt per lemon.Scald a large pickling jar and press the lemons into it.Add the remaining salt to the jar along with bay leaves and peppercorns.Fill the jar with boiling water and seal tightly with the lid.Let them sit for 2 months in a dark and cool cupboard/room.When the white part of the rind has turned clear, the lemons are ready.Rinse them before use to reduce saltiness.
