Ingredients

  • 100 gram Almonds
  • 100 gram Sugar
  • 60 gram Water
  • Possibly. 1 tsp vanilla sugar and 1 tsp cinnamon

Instructions

  • Measure everything into a large pan and turn on medium-high heat.
  • Stir the mixture - it forms a syrup and boils here.
  • The sugar crystallizes and becomes hard.
  • Scrape the hard sugar loose while you constantly stir the almonds.
  • Continue to stir until the sugar caramelizes lightly around the almonds with a slightly shiny surface.
  • Take the almonds off the heat and onto a baking sheet lined with parchment paper.
  • Spread the almonds so they don't stick together.
  • Let them cool before pouring them into a tin, jar, or eating them!
  • It requires patience - and just when you think they have become ugly and white, you must keep your patience and let them caramelize further!
