Water is boiled with sugar, glucose, and a little vanilla.
Add the sliced rhubarb and let it boil until the rhubarb is very tender.
Blend well until smooth.
Now process it in an ice cream maker or do as I did:
Pour the mixture into a container and place it in the freezer.
Stir the mixture every quarter hour.
When the mixture is half frozen, add the egg white whipped with powdered sugar.
Fold it together with the half-frozen mixture.
Let the ice stay in the container or fill it into ice molds like here.
Make sure the ice is deeply frozen before taking out of the molds. ☀️?
Garnish and ready to enjoy?
