Place the pitted plums in a pot along with sugar, water, and 1 lemon cut into quarters.
Bring the pot to a boil and let it simmer for 15 minutes.
Remove the pot from the heat and let it cool down slightly.
Pour the fruit mixture into a sieve lined with a cloth and press on the plums with a spoon to extract all the juice. Place a steel bowl, sterilized in boiling water, under the sieve to collect the juice.
Optionally, taste the juice and add more cane sugar or a bit more lemon juice if needed.
Pour the juice into sterilized bottles and store it in the refrigerator.
Serve the plum juice mixed with water to taste, lemon slices, and ice cubes.

Notes
Use the fruit pulp left in the cloth as a fruit puree, sweetened with a bit of sugar and vanilla.
Serve the plum puree with milk, cream, and a sprinkle of sugar
