Add 400 grams of flour and mix well – ideally using a stand mixer.
Add the salt and let it mix thoroughly.
Add the remaining flour (always hold back a little) and then the oil.
Let the dough mix well until it is smooth and elastic.
Let the dough rise under a shower cap or a damp tea towel for at least 60 minutes.
Once risen, turn the dough out onto a floured surface.
Divide it into 8 parts and roll each part into a tight ball.
Place the dough balls on a floured surface (such as a baking sheet or tray) with a little space between them (3 – 5 centimeters) and brush them with a little oil.
Cover them with plastic wrap or a damp tea towel until the dough is needed.
Roll out the dough thinly and add the desired toppings.
Bake the pizzas for about 3 – 5 minutes at 250 – 300 degrees Celsius (572 degrees Fahrenheit) convection (or as hot as your oven will go) on a baking steel.
