Cut the cucumber and let it drain in a sieve or colander. I used a spiralizer to get the desired thickness. Feel free to add a bit of salt.
Heat water, vinegar, and sugar until it lightly boils and continue boiling until the sugar dissolves.
Fill the jar with cucumber strips, firmly packing them to avoid loose layers. Ensure the strips are not too long; it's better to have several shorter ones.
I often add a handful of peppercorns to the jar.
Pour the hot brine over and seal the lid.
Allow to cool and let it sit for at least 3-4 hours before they are ready to eat.

Notes
The shelf life is a couple of months once the jar is opened again.
However, they never last that long in our house :-)
