Instructions
Parsley Sauce
A large pot is needed for the sauce, as it is quite a large portion to be made for 4 people.
Melt butter over medium-high heat and add 1 tbsp. flour at a time while whisking vigorously.
When all the flour is used, you will have a large roux.
Add potato cooking water while whisking vigorously.
Continue whisking and add the vegetable stock - here's how you can make your own
vegetable stock
.
Reduce to medium heat, and when the sauce has thickened well again, add milk.
Then add the cream and let it simmer for 5 minutes.
Season with salt, pepper, lemon juice, vinegar, sugar, and possibly grated nutmeg.
2 minutes before the sauce is ready, add chopped parsley, and let it simmer for 1-2 minutes with the parsley in it.
The sauce is now ready to be served.
