Start by soaking your chickpeas overnight, and cook them according to the package instructions.
Once the chickpeas are cooked, drain the water.
Then take 4-5 tablespoons of cooked chickpeas in a blender or food processor, along with 4 tablespoons of tahini and 1 chopped garlic clove.
While blending, add water and lemon juice gradually.
Add more water or lemon if needed.
The mixture should have a thin yogurt consistency.
While everything is blending together, fry a few spoonfuls of chickpeas in oil with a little paprika.
When the chickpeas are golden, remove them and toss lightly in sumac and paprika.
Serve the blended "yogurt" in a bowl, add a couple of spoonfuls of cooked chickpeas, and then a spoonful of fried chickpeas.
Add chopped parsley, and sprinkle a little sumac and paprika over.
Finally, add a little olive oil around the edges.
