Hotdog

The delightful and classic Danish dish: "Hotdog" is always a sure hit in most Danish homes. Our version comes with homemade sausage buns, grilled sausages, homemade pickled cucumber salad, homemade remoulade, coarse mustard, onions, crispy onions, and ketchup.

Ingredients

  • 8 pcs. Bread Preferably homemade hotdog buns/sausage buns
  • 8 pcs. Sausages Grilled sausages
  • Ketchup To taste
  • remoulade - danish cold mayonnaise sauce with pickles To taste. Preferably homemade
  • Mustard Preferably coarse
  • 1 pcs. Onion Finely chopped

Roasted onions

  • 52 gram Wheat Flour
  • 6 gram Salt
  • 1.15 gram Pepper From grinder
  • 1 pcs. Onion Preferably large

Pickled Cucumber

  • 200 gram Vinegar Clear vinegar or apple cider vinegar
  • 200 gram Water
  • 170 gram Sugar
  • 2.3 gram Peppercorns Black
  • 2 pcs. Bay Leaf
  • Coarse salt
  • 1 pcs. Cucumber

Instructions

  • When I make this dish, I always start with the pickling and baking of the bread.
  • Both benefit from sitting for a bit before you eat. The cucumber salad can advantageously be made the day before, as it only gets better from sitting and soaking.

Cucumber salad

  • Cut the cucumber into thin slices and sprinkle salt over them. Place them in a sieve and let them sit for 20-30 minutes. This removes some of the liquid and makes them firmer.
  • Bring all the other ingredients to a boil in a pot and let it cool. If you are in a hurry, pour the liquid into a bowl with a large surface area and place it in the refrigerator.
  • Once the liquid is at room temperature, rinse the cucumbers in cold water to wash away all the salt.
  • Dry them off and place them in a pickling jar. Make sure the jar is scalded beforehand.
  • Pour the liquid over the cucumbers and refrigerate. They can last about 1 month this way.

Crispy onions

  • It sounds complicated to make, but it is incredibly easy - especially if you have a deep fryer to help.
  • Peel an onion and cut it into thin rings.
  • Put flour, salt, and pepper in a small bag and add the onion to it.
  • Close the bag and shake it well, so the flour is evenly distributed on the onion.
  • Pour the contents of the bag through a sieve and shake a few times - this removes most of the excess flour.
  • Fry the onions for 3-5 minutes at 180 degrees Celsius (356 degrees Fahrenheit) in a deep fryer.
  • Take them out of the fryer and place them on absorbent paper until ready to serve.

Hotdog buns

  • The hotdog buns are made according to this recipe. Make the whole batch and freeze half of them – that way you have a quick dinner ready another day.
  • Toast them on a toaster or grill for a few minutes on each side before serving.

Grilled sausages

  • In our opinion, sausages should be fried/grilled over high heat until they crack. This usually takes 4-6 minutes on each side.

Sides

  • If you are not a big fan of cucumber salad, it can be replaced with pickled red onions or onion marmalade.

  • For the raw onions, simply peel them and chop them as finely as you like.

Serving

  • Cut the bread lengthwise with a bread knife. Be careful not to cut too deep, so they split in half.
  • Spread mustard on the inside and place the sausage in it.
  • Add a stripe of ketchup between the bread and sausage on one side and a stripe of remoulade on the other side.
  • Add crispy and raw onions along with the cucumber salad and serve immediately.
  • Remember, there is no neat way to eat a hotdog, so it's okay if it gets a little messy.
