Cut the tortilla pancakes into triangles. If you have a pizza slicer, use it and cut them as you would a pizza.
Basically, there are three different ways to make them:
- Deep-fried
- Pan-fried
- Oven-baked
Deep-fried
Cook them at 170 degrees Celsius (338 degrees Fahrenheit) for a few minutes. They should be crispy without burning. Be careful not to put too many in at once, as they should not overlap. It typically takes 2-3 minutes.
Pan-fried
Heat the oil in a pot to 170 degrees Celsius (338 degrees Fahrenheit). If you don't have a thermometer, you can check the oil by putting the tip of a tortilla into the oil. If it bubbles around it, the oil is ready. Again, be careful not to put too many in at once, as they should not overlap. It typically takes 2-3 minutes.
Oven-baked
Toss your tortilla chips in oil and place them on a baking sheet lined with parchment paper. It's a slightly tedious process, but it's important that they all get oil and do not overlap with each other.
Cook them in the oven for anything from 7-15 minutes at 180 degrees Celsius (356 degrees Fahrenheit) conventional oven. They should be golden.
Common to all of them is that they should be placed on oil-absorbing paper when they come out.
Sprinkle salt on them, let them cool and they are ready to serve.
