Homemade Sausage Rolls

Ingredients

  • 50 gram Yeast
  • 100 gram Milk
  • 100 gram A38 Yogurt Can be replaced with buttermilk, yogurt or a similar fermented product.
  • 2 pcs. Egg
  • 300 gram Wheat Flour
  • 100 gram Whole Wheat Flour Can be replaced with graham flour, rye flour or other whole grain flours.
  • 6 gram Salt
  • 12.5 gram Sugar
  • 75 gram Olive Oil
  • 8 pcs. Sausages Choose a sausage of good quality
  • Ketchup
  • Sesame Seeds for garnish

Instructions

  • Warm the milk in a saucepan until it is finger warm/lukewarm.
  • Dissolve the yeast in the milk and add A38, oil, sugar, and one egg. Mix well and then add salt and flour gradually.
  • Knead the dough until it is smooth and easy to work with - feel free to use a mixer or the dough hooks on an electric hand mixer. The dough should not be too sticky, but smooth and preferably slightly damp.
  • Let the dough rise in a bowl covered with a tea towel. Allow it to rise for about 1 hour.
  • Once the dough has risen, roll it out on a floured surface and cut it into 24 triangles. Spread ketchup on the triangles. Cut the sausages into three and place a piece of sausage on the wide end. Roll the dough around, so you have a neat roll.
  • Let the sausage rolls rise for 30 minutes, then brush them with a beaten egg and sprinkle with sesame seeds.
  • Bake them in a preheated oven at 175 degrees Celsius (347 degrees Fahrenheit) (fan) for 12-15 minutes.

Notes

Tip: the rolls can be easily frozen, so bake a large batch while you're at it.
