Crumb the yeast into a large bowl or dough dish.
Pour lukewarm water, salt, and sugar into the bowl.
Stir the mixture until the yeast is dissolved - use a hand whisk.
Add the cooled oatmeal to the yeast mixture.
Add flour and mix the dough together.
Add enough flour to the dough so that it is kneadable but still soft and pliable.
Knead the dough well.
Cover the bowl with a damp kitchen towel or a shower cap.
Let the dough rise for 30 minutes.
Shape the dough into 15-20 buns.
Place them on a baking sheet with baking paper.
Let the shaped buns rise again for 30 minutes.
Brush the buns with milk.
Bake them in the oven for 10-12 minutes at 220 degrees Celsius (428 degrees Fahrenheit) convection.
Let the baked buns cool on a wire rack.
