Pizza doughWe usually start this dough the evening before we are going to have our pizzas.Pour the water into a bowl and dissolve the yeast in it.Add oil and salt and stir well. Then add flour gradually until the dough feels right. The dough is quite wet, but that's okay.Let it rise overnight at room temperature.The next day, place the dough on a floured surface and divide it into 2 pieces, shaping them into balls.Coat the balls with oil and place them on a baking sheet lined with parchment paper. They will rise, so they must not be too close together. Cover them with plastic wrap and place them in the refrigerator.2 hours before the dough is to be used, take them out of the refrigerator.Place the balls/dough on a floured surface and roll them out as thinly as possible with a rolling pin. confit de canard sous vide. For this recipe, we have taken a single duck leg out of the freezer, so it's ready for the evening. The meat is precooked and should be placed on your pizza directly from the fridge. It will be heated by the heat of your oven.So essentially, the only thing you need to do is shred the meat from the leg. Mashed potatoesCut the potatoes into small pieces and boil them in unsalted water with garlic and fresh thyme.Once they are tender, remove the water and thyme. Mash them together with salt, dried rosemary, and olive oil using a fork. PizzaScald the flat-leaf parsley and thyme. Dry them thoroughly and chop them into small pieces.Roll the dough out thinly and spread it with mashed potatoes.Place slices of your duck leg and sprinkle with grated cheese.Bake the pizza on a
baking steel at 275 degrees Celsius (527 degrees Fahrenheit) (convection) for 4 minutes.Place the herbs on the pizza and grate truffle over it, and serve immediately.Serve immediately.
