Dissolve the yeast in the water and add salt and oil.
Add a bit of the wheat flour and stir the dough. Then add the durum wheat flour and mix together.
Add the wheat flour little by little while you mix the dough. When the dough has a thick sticky consistency, pour it out onto your clean kitchen counter and knead the rest of the wheat flour into the dough. The dough is ready when it just barely stops sticking to your hands.
Pour a tablespoon of olive oil into a large bowl and place the dough in it. Make sure the sides of the bowl and the entire surface of the dough are coated in oil. Let the dough rise covered for 1 hour and 15 minutes.
Brown the beef in sunflower oil over high heat and season with salt & pepper. Then spread the beef pieces on a wooden cutting board, ready to be placed on the pizza.
Divide your pizza dough into four pieces. Roll out one piece on the kitchen counter so the dough reaches a thickness of about 3 mm.
Spread a little tomato sauce on the pizza, without exceeding the edge of the crust.
Stretch long thin pieces of mozzarella and spread them on the pizza. Also distribute a number of red onion slices on the pizza, to taste. Now spread your pieces of beef around the pizza.
Bake the pizza on a pizza stone in the oven at 265 degrees Celsius (509 degrees Fahrenheit) for 7-10 minutes. When the pizza crust turns golden brown and crisp, it is ready to take out.
