Gourmet pizza with beef tenderloin

Gastrofamiliens' take on a mega delicious pizza that elevates everyday life to new heights. The recipe requires a baking stone/steel. If you don't have a pizza stone when the pizza is going into the oven, there is an opportunity to be creative and find an alternative pizza stone. For example, our pizzas are baked on the bottom of a cast iron grill pan.

Ingredients

  • 200 gram Beef Fillet cut into pieces of 4x4x4 cm
  • 27.2 gram Sunflower Oil
  • 100 gram Mozzarella Chees fresh
  • 4 pcs. Thyme Stalks sprigs
  • 1 pcs. Red Onion sliced into thin whole rings
  • 250 gram Water cold
  • 64.4 gram Olive Oil
  • 25 gram Yeast
  • 5.9 gram Salt
  • 250 gram Wheat Flour
  • 150 gram Durum flour
  • 400 gram tomato sauce

Instructions

  • Dissolve the yeast in the water and add salt and oil.
  • Add a bit of the wheat flour and stir the dough. Then add the durum wheat flour and mix together.
  • Add the wheat flour little by little while you mix the dough. When the dough has a thick sticky consistency, pour it out onto your clean kitchen counter and knead the rest of the wheat flour into the dough. The dough is ready when it just barely stops sticking to your hands.
  • Pour a tablespoon of olive oil into a large bowl and place the dough in it. Make sure the sides of the bowl and the entire surface of the dough are coated in oil. Let the dough rise covered for 1 hour and 15 minutes.
  • Brown the beef in sunflower oil over high heat and season with salt & pepper. Then spread the beef pieces on a wooden cutting board, ready to be placed on the pizza.
  • Divide your pizza dough into four pieces. Roll out one piece on the kitchen counter so the dough reaches a thickness of about 3 mm.
  • Spread a little tomato sauce on the pizza, without exceeding the edge of the crust.
  • Stretch long thin pieces of mozzarella and spread them on the pizza. Also distribute a number of red onion slices on the pizza, to taste. Now spread your pieces of beef around the pizza.
  • Bake the pizza on a pizza stone in the oven at 265 degrees Celsius (509 degrees Fahrenheit) for 7-10 minutes. When the pizza crust turns golden brown and crisp, it is ready to take out.
  • Finally, sprinkle fresh thyme leaves over the pizza and then serve it!Enjoy your meal!
