Gourmet burger

A true luxury burger consisting of well-aged and freshly minced beef, homemade burger buns, and dry-cured, crispy bacon.

Ingredients

Burger Buns

  • 20 gram Yeast
  • 0.5 l Water lukewarm
  • 10 gram Coarse salt
  • 700 gram Wheat Flour
  • 100 gram Butter soft
  • 1 pcs. Egg for brushing
  • Sesame Seeds for sprinkling

Beef

  • 500 gram Ground Beef from dry-aged beef (see more info in the instructions).

Serving

  • 200 gram Bacon homemade, dry-cured bacon (see the note).
  • 4 slices Cheddar cheese

Sides

  • Pickled red onions
  • Cucumber in slices (can be replaced with tomatoes)
  • Baby Spinach
  • Ketchup preferably homemade - see note.

Instructions

Burger buns:

  • Crumble the yeast into a mixing bowl, a large bowl, or in a stand mixer.
  • Add water and salt and dissolve the yeast in it.
  • Stir wheat flour into the yeast mixture until you have a smooth dough.
  • Add the soft butter in small lumps and mix the dough well.
  • Now add just enough flour to make the dough smooth and kneadable. It should not be dry; it must be slightly moist.
  • Let the dough rise under a damp cloth - alternatively, you can use a shower cap - for about 30 minutes.
  • Punch the dough down and shape it into flat buns.
  • Let the buns rise again for 30 minutes.
  • Crack the egg into a deep plate and whisk it with a fork.
  • Brush the risen buns with the beaten egg and sprinkle with sesame seeds.
  • Bake the buns for 10 minutes at 210 degrees Celsius (410 degrees Fahrenheit), until they are golden and thoroughly baked.
  • Let the burger buns cool on a wire rack.

Bacon:

  • Fry the bacon crispy in a dry pan over medium-high heat.
  • Take the bacon off the pan and place it on paper towels to drain until ready to use.
  • They release quite a bit of bacon fat, which you should just leave in the pan.

Patties

  • The patties are made from homemade, dry-aged (dry-aged) beef chuck and brisket. It's meat of really high quality, so it's important not to overcook them, as they will become dry and unappealing.
  • Shape the meat into slightly flat patties and season them with salt and pepper on both sides.
  • Fry the patties in the bacon grease for 4 minutes on one side.
  • Then turn the meat. During frying, it is beneficial to baste the patties with the bacon grease so that the fried surface stays juicy.
  • After about one minute, place a slice of cheddar cheese on top.
  • Let the meat fry for another 3 minutes, then take it off the pan. Let the patties rest uncovered for 2 minutes before serving.
