First of all, the crab claws must be boiled. They can be bought pre-boiled, so if that's what you have done, you just need to remove the meat. Do this by holding the crab claw in your palm and striking it with the back of a regular tablespoon. Then, you can extract the meat using a teaspoon, fork, or lobster fork.
If the claws are not pre-boiled, boil them for 8 minutes (if they are small) or up to 12 minutes (if they are large). After that, remove them from the water and rinse under cold water.
Shred the meat and season it with salt and pepper.
Shape it into balls, either round or elongated.
Freeze them for at least 1 hour.
Coat the balls in a container with flour, then in the beaten eggs, and finally in panko.
Freeze them again for at least 30 minutes afterward. If you don't have the time, you can deep-fry them right away, just be careful when placing them in the deep fryer/pot/pan as they are more likely to fall apart.
They need to be fried until golden, which typically takes 3-5 minutes.
