Instructions
Hash brown waffles
Start by peeling your potatoes.
Grate them on the fine side of your grater into a sieve.
Press some of the liquid out of the potatoes in the sieve.
Peel and finely chop the onion.
Mix everything together in a bowl and let it sit for 5-15 minutes to marinate a little.
I use a Belgian waffle iron for this recipe. It takes about 10-15 minutes to warm up, so it can heat while the batter rests.
Put the batter in the waffle iron and cook until crispy. If you don't have a non-stick coating, be sure to use a bit of oil so they don't burn.
I was in a "playful mood", so I tried a few different things as sides:
Poached egg
. I used
this recipe
.
Mashed avocado
. I used
this recipe
.
Crispy fried English bacon
. The bacon was fried in the pan. I used
homemade English bacon
for this meal.
Fried egg
. One egg was fried in my bacon fat in the pan. The other was cooked in the waffle iron, just to see if it was possible. It was :-)
Since I didn't have any white beans at home, I didn't make
baked beans
. I definitely need to do that next time.
