Few things in the world are better than dream cake! Soft and spongy cake base with sinful coconut topping on top... the very best part is, of course, the topping, and personally, I always go for a "corner piece" because the topping layer is thickest there.
Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
Whisk butter and sugar well together.
Add one egg at a time and whisk between each addition.
Add milk and yogurt, stir together.
Add all the dry ingredients and stir to a smooth batter.
Divide the batter into muffin tins, filling only a little over halfway - they will rise, and there needs to be room for the filling.
Bake your muffins for 20 minutes at 200 degrees Celsius (392 degrees Fahrenheit).
The Filling
In the meantime, melt all the ingredients for the filling in a pot.
When your muffins have baked for 20 minutes, add the filling on top. Optionally, cut a hole in the top of your muffins and put the filling in here as well if you want some inside.
Bake for an additional 5 minutes at 200 degrees Celsius (392 degrees Fahrenheit).
