Keep the display on
- 1 Cauliflower a whole head
- Almonds 4 handfuls
- Parmesan grated, amount to taste - I used a good chunk
- 91 gram Olive Oil
- Sugar to taste
- Salt to taste
- Lemon Juice to taste
- Pepper from the grinder, to taste
- Herbs amount as needed - I used wood sorrel, but anything can be used, e.g., tarragon
- Find a frying pan.
- Place the almonds in the pan and toast them.
- Remove the pan from the heat.
- Now remove the leaves from your cauliflower head.
- Rinse the cauliflower thoroughly under the faucet.
- Find a cutting board.
- Cut the cauliflower into large florets.
- Pick the wood sorrel leaves.
- Find your blender or food processor.
- Put the cauliflower florets in the blender.
- Blend the florets into "cauliflower rice".
- Pour the "rice" into a bowl.
- Put half of the almonds in the blender.
- Blend the almonds into fine pieces.
- Pour the blended almonds into the bowl with the cauliflower.
- Add the remaining whole almonds and grated parmesan to the bowl.
- Find a small bowl.
- Put olive oil, a bit of sugar, salt, lemon juice, and pepper in the bowl.
- Stir it around and possibly adjust the taste with more sugar, salt, lemon juice, and pepper.
- Pour the dressing over your salad.
- Add the wood sorrel to the salad.
- Mix everything together.
- Serve
