Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit), fan setting.
The potatoes should be cooked and eaten with their skins, so be sure to scrub them well under cold water. I typically use a sponge or a brush for this task.
Dry them thoroughly with a clean tea towel/paper towel.
In a small bowl, mix salt and oil (the bowl should be large enough to accommodate the potato).
Cut a cross in the top of the potatoes, about halfway down.
Place the side with the cross down into the bowl of oil and salt, then place them on a rack that can go in the oven. If the last potato doesn't get oil on top, just use a brush to apply it.
Put the rack in the oven and cook them for 80-90 minutes. If the baked potatoes are small, cook them a bit less (70-80 min.).
Let them rest outside of the oven (on a new rack) for 5-10 minutes before serving.
Serve with a good dollop of butter on top.
