  • 1 package Dates fresh - pits can be removed if desired

  • Prepare the grill: Light your grill and preheat it to medium heat. If using a charcoal grill, ensure you have embers that are not too intense to avoid burning the dates and bacon.
  • Prepare the dates: Carefully slice the dates on one side to remove the pits. If the dates are small, you can leave them whole, or you can use a knife to gently open them and remove the pits.
  • Stuff the dates: If desired, you can add a small sprig of fresh rosemary or thyme to each date before wrapping them in bacon. This adds an extra dimension of flavor.
  • Wrap the dates in bacon: Wrap each date in a slice of bacon and secure it with a wooden skewer or a toothpick. Ensure the bacon covers the date well and the skewer holds everything together.
  • Prepare the grill: Place a piece of parchment paper on the grill grate to prevent the dates from sticking or burning on the grill. This step is important, as the bacon can leak fat that can cause flare-ups. Alternatively, use an aluminum tray to place the dates in.
  • Grill the dates: Place the wrapped dates on the grill over medium heat. Turn them regularly to ensure the bacon browns and crisps evenly on all sides. It usually takes about 10-15 minutes to grill them, but the time may vary depending on the grill's temperature and the thickness of the bacon.
  • Glaze the dates (optional): Towards the end of the grilling time, you can brush the dates with a little honey or maple syrup to add extra sweetness and shine. This step is optional but can provide a nice flavor contrast to the salty bacon.
  • Serving: When the bacon is crispy and golden and the dates are softened, your bacon-wrapped dates are ready to serve. Remove the wooden skewers or toothpicks before serving them.
