Ingredients

Boiling potatoes

  • 1.5 kg Potato
  • 1 pcs. Bay Leaf
  • 12 gram Salt
  • 6 pcs. Whole cloves
  • 1 pcs. Cinnamon Stick just a piece

Spices

  • 1 pcs. Onion medium-sized
  • 4 pcs. Chili round
  • 2 gram Spices salt, cumin seeds, fenugreek leaves (kasoori methi)

2. spice mixture

  • Cilantro 1 cup fresh and chopped - or to taste
  • Chili fresh green - to taste (finely chopped)
  • 16 gram Cornstarch
  • Salt to taste
  • Chili Powder to taste
  • 4 gram Cumin powder
  • 4.5 gram Chaat Masala
  • 3 gram Amchur powder dry mango powder
  • 3 gram Anardana powder pomegranate powder

Preparation

  • Grate for the coating
  • Egg for the coating - whisked
  • Oil for frying

Instructions

Boiling the potatoes

  • Boil the potatoes with all the ingredients.
  • The cinnamon stick should be removed after 10 minutes.
  • Once the potatoes are boiled, they should be cooled down.
  • Remember to remove the bay leaf and clove afterward. ⠀
  • Dice the onion.
  • Heat up a little oil in a pan, sauté the onions until they change color (slightly).
  • 1. First dip it in the egg. Make sure the entire patty is coated in egg. ⠀ 2. Then coat the patty in breadcrumbs. ⠀ 3. In a pan with hot oil, fry them until they are golden brown on both sides. ⠀ They can also be frozen after shaping. Just thaw before frying.
  • Then add the above-mentioned spices and fry together with the onions for 1-2 minutes. ⠀ If the potatoes have cooled down, add the sautéed onions and spices to them.

  • Roughly chop the coriander and finely chop the fresh chili. ⠀ Add spices to the potatoes and “mash the potatoes”.
  • It’s okay if there are small pieces/lumps of potatoes (it gives good flavor) and then shape them into “patties”. ⠀
