Recipe for summer salad with shrimps
A fresh and delicious summer salad made with shrimp, crisp lettuce, and fresh vegetables. The great thing about this salad is that you don’t have to strictly follow the recipe but can mix and match the ingredients according to your preferences and what you have on hand. For example, try adding raw, green asparagus and halved cherry tomatoes. This salad is perfect as a tasty and light appetizer served on the terrace, preferably in the company of good friends and a glass of chilled white wine.

Ingredients
- 400 gram Prawns preferably large thawed Greenland shrimps from frozen
- 2 pcs. Avocado ripe
- Lemon Juice to drizzle over the avocado flesh
- 400 gram salad A selection of different mixed salads, e.g., romaine, arugula, frisée, and baby spinach
- 1 pcs. Cucumber
- 6 gram Dill chopped
Instructions
- Rinse the thawed frozen shrimps in a sieve and let them drain well. Rinse the salad and dry it thoroughly. Tear it into smaller pieces, depending on the type of salad you are using. Rinse the cucumber and cut it lengthwise. You may remove the seeds with a teaspoon. Slice it thinly. Cut the avocados lengthwise and remove the pits in the middle. Cut the flesh into small cubes. Immediately drizzle with a bit of lemon juice to prevent discoloration. Arrange the salad on a large platter. Place the cucumber, avocado, and finally the shrimps on top. Sprinkle with chopped dill and serve immediately.
Notes
Serve the dressing in a bowl on the side of the salad.
