
Recipe for spelt porridge with skyr, berry compote, and licorice
Super healthy spelt morning porridge with the most amazing topping; ice-cold skyr, warm berry compote, white chocolate, crunchy almonds, and liquorice granulate – yum, what a wild combo!
The porridge is made with spelt, which gives plenty of bite and is rich in both dietary fibers and proteins – I promise you, this dish keeps your stomach happy and full for a long time. And the topping is just amazing and complements each other so well!
The spelt kernels are cooked with water, spelt flakes (or oatmeal), and a bit of vanilla – just like ordinary oatmeal – but based on whole grains. And then it’s just about going crazy with the topping afterward.

Spelt porridge with skyr, berry compote, and licorice
Ingredients
Porridge
- 80 gram Spelled Kernels cooked
- 35 gram Spelled Flakes can be replaced with rye flakes or oatmeal
- 250 gram Water
- 4 gram Vanilla Sugar
- 1 pinch Salt
Berry Compote
- 60 gram Berry frozen - use what you have
- 15 gram Water
- 10.5 gram Honey liquid
Other toppings
- 50 gram Plain yogurt
- 1 handful chopped almonds
- 5 gram Licorice Granules or licorice powder
- 15 gram White chocolate chopped
Instructions
Porridge
- Put all ingredients for the porridge in a pot and bring to a boil.
- Let simmer for 5-6 minutes until the porridge has the desired consistency.
Berry compote
- While the porridge is simmering, boil berries with water and honey – let simmer until they are tender and lightly mash them with a fork.
- Put the porridge in a bowl and top with berry compote, skyr, almonds, chocolate, and licorice – serve
