Spelt is great because it’s very filling without making the pancakes too coarse, so no complaints from any picky kids…
They are easy to make and can be filled with whatever you like. This version was super quick; spread with herb/garlic cheese and then filled with lettuce, ham, cheese, and tomato. They taste delightful!

Spelt Pancakes with Ham and Cheese
Equipment
- 1 Frying Pan
Ingredients
Pancakes (approx. 12 pcs.)
- 3 pcs. Egg
- 600 gram Milk
- 212 gram Spelled Flour
- 6 gram Salt
- 4 gram sugar
- Butter for frying
Fill
- 200 gram cream cheese with garlic/herbs or just the cream cheese you prefer
- 1/2 pcs. Iceberg salad or other lettuce
- 200 gram Ham good
- 12 slices cheese
- 4 pcs. Tomato
- 1/2 pcs. Cucumber
- Salt and Pepper
Instructions
- Mix all the ingredients for the pancakes together and fry them golden in a bit of butter.
- Let them cool slightly and spread with cheese, then fill with lettuce, ham, cheese, and tomato.
- Season with a bit of salt and pepper or whatever you like. Roll up and serve…
