Recipe for salsa verde – spicy and tangy salsa
Salsa verde, or “green sauce,” is one of the cornerstones of Mexican cuisine. Its bright color and punchy acidity come from tomatillos – small green fruits wrapped in papery husks that are tangy, juicy, and ideal for blending. When paired with green chili, garlic, onion, lime, and cilantro, they create a sauce that’s as versatile as it is flavorful.
Origins and Tradition
Salsa verde is deeply rooted in the culinary traditions of central Mexico. Used as both a condiment and a cooking base, it features prominently in tacos, enchiladas, tamales, and over grilled meats. In home kitchens and taco stands alike, salsa verde varies by region and taste – some thick and mild, others thin and fiery.
Flavor Profile
The key flavor of salsa verde is tang – thanks to tomatillos and lime. It’s often slightly spicy from chili, but not overwhelmingly so. The garlic and onion round out the base, and coriander adds freshness. The texture can range from chunky to smooth, depending on how it’s blended.
Uses in the Kitchen
- Topping for tacos, tostadas, or grilled meats
- Base for braised pork or chicken (e.g., chile verde)
- Dip for tortilla chips or quesadillas
- Layer in enchiladas verdes
Tips for Perfect Salsa Verde
- Use fresh tomatillos if you can get them, for the brightest flavor.
- Roast the vegetables before blending for a smoky variation.
- Adjust heat by choosing milder or hotter chilies.
- Blend with a handful of avocado for a creamy twist.
Storage and Make-Ahead
Salsa verde keeps well in the fridge for 5–7 days. The flavor often improves after a day as the ingredients meld. It can also be frozen for longer storage.
Nutrition Notes
Salsa verde is naturally vegan, gluten-free, low-calorie, and rich in vitamin C and antioxidants from tomatillos and chili. It’s a bright and healthy way to add flavor to meals.
Final Thoughts
With its zesty, herbaceous kick, salsa verde is a must-have for any lover of bold flavor. Whether spooned over grilled chicken, used as a dip, or the base of a slow-cooked stew, it brings brightness and authenticity to your plate. Once you start making it fresh, you’ll never go back to store-bought.
