Ingredients
- 100 gram Flour chickpea flour
- 300 gram Water or stock
- Salt
- Pepper
- 15 gram Parmesan grated
- Oil for frying
Instructions
- Mix the ingredients for your chickpea fritters in a pot. Slowly heat while whisking. You should end up with a porridge that can just barely be whisked. If the porridge is too thick, add a little more water or stock. Cook the porridge over medium heat (it should bubble slightly) for about 10 minutes.
- Pour the porridge into a dish that has been greased with olive oil beforehand. Allow the porridge to cool. Once it is cold, cut it into bite-sized pieces. Fry the pieces until they are lightly golden.
- When it has cooled, cut it into bite-sized pieces and fry until they become lightly golden (this takes about five minutes, and the oil should be about 180 degrees Celsius (356 degrees Fahrenheit) warm).
- Sprinkle the chickpea fritters with a little salt and serve them as an appetizer with aioli or as a side dish to light meats.
