You can use exactly the vegetables you have in the fridge…. with a base of tomato, carrots, onions, garlic – and of course bacon, it just works, no matter what you put in.

Recipe for minestrone soup

A steaming warm and delicious autumn dish is right here with all the good green stuff from the fridge, small pasta, and crispy bacon on top. Tastes wonderful and is great for cleaning out the fridge.

This version has been tried and tested, tasted, and approved by both big and small. It is packed with vegetables and flavor and super easy to make! You can use exactly the vegetables you have in your fridge… with a base of tomato, carrots, onions, garlic – and of course bacon, it just works, almost no matter what you put in.

Sauté the vegetables, add the liquid, and let it simmer until done – easy.

Ingredients

Soup

  • 1 pcs. Onion finely chopped
  • 1 clove Garlic finely chopped
  • 3 pcs. Potato diced
  • 2 pcs. Carrots diced
  • 0.5 pcs. Squash diced
  • 1 pcs. Leek thinly sliced
  • 1.25 l Water
  • 1 can Chopped Tomatoes
  • 2 pcs. Vegetable Broth cubes
  • 6 gram Salt
  • 1.15 gram Pepper
  • 2.3 gram Paprika
  • 0.5 gram Thyme dried

In addition

  • 200 gram Bacon diced
  • Soup Horn or other pasta

Instructions

  • Prepare all the vegetables and first sauté onions and garlic in a little oil in a pot. When they are soft, add potatoes and carrots, sauté for a couple of minutes. Add zucchini and leek, sauté for a few more minutes.
  • Add water, tomatoes, bouillon cubes, and spices. Bring it all to a boil and then let it simmer for 15-20 minutes. Stir occasionally.
  • Add the ditalini pasta during the last 10 minutes of cooking time.
  • While the soup simmers, fry the bacon until crispy.
  • Serve the soup with bacon on top.
