
Recipe for meatloaf with leeks, thyme, and crispy ham
Meatloaf – a delightful classic! We had it with creamy potatoes yesterday and made a version with leeks and thyme in the meat mixture and crispy ham on the outside – it was delicious.
The smart thing about meatloaf is that you can fill it with whatever you like, and then it takes care of itself in the oven for the rest of the time.
And sometimes it’s just good to have some of that grandma-style food, isn’t it…?
I served the dish along with creamy potatoes and Jerusalem artichokes.

Meatloaf with Leeks, Thyme, and Crispy Ham

Ingredients
- 500 gram Minced pork
- 1 clove Garlic
- 1 pcs. Leek
- 6 gram Salt
- 1.5 gram Pepper
- 3 gram Thyme dried
- 1 pcs. Egg
- 8 gram Wheat Flour up to 2 tbsp
- 4 slices Serrano ham
Instructions
- Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
- Finely chop the garlic and leek and mix into the ground meat along with the other ingredients.
- Form a meatloaf and place it in an ovenproof dish.
- Lay the ham slices on top, slightly overlapping them, and tuck them in at the bottom.
- Cook for 45 minutes in the oven and serve with, for instance, potatoes and gravy or scalloped potatoes.
