Meatloaf - a delightful classic! We had it with scalloped potatoes yesterday, and we made a version with leeks and thyme in the meat mixture and crispy ham on the outside - it was delicious. The smart thing about meatloaf is that you can fill it with whatever you like, and then it takes care of itself in the oven for the rest of the time.
