Ingredients

  • 250 gram Milk Chocolate For the chocolate shells
  • 0.5 l Whipping Cream For the ice cream
  • 1 can Condensed milk For the ice cream
  • 150 gram Milk Chocolate For the ice cream
  • 100 gram Water For the caramel
  • 85 gram Sugar For the caramel
  • 50 gram Whipping Cream For the caramel

Instructions

  • Cold Caramel

  • Put the sugar in a pot and melt it over medium heat without stirring. 
  • When the sugar has melted, add the water, immediately remove the pot from the heat, and let it foam for 2 minutes.
  • Return the pot to the heat and let the sugar and water cook together.
  • When the sugar and water have cooked together, add the cream and remove the pot from the heat again.
  • Let it foam, then return the pot to the heat and cook for a couple more minutes until you have a delicious thick caramel.
  • Pour the caramel into a piping bag and refrigerate for about an hour.

  • Meanwhile:
  • Chocolate Shell

  • Melt 250 grams of milk chocolate in the microwave for 40-60 seconds and stir well to make sure all the chocolate is melted.
  • Pour the melted chocolate into silicone molds (I used one with 24 small half-spheres and one with 8 medium-sized half-spheres).
  • Make sure the sides of the half-spheres are fully covered. Pour the excess chocolate onto a piece of baking paper; once it hardens, it can be put back in the bag and used another time.
  • Place the chocolate shells in the freezer while you make the ice cream.

  • Mars Ice Cream

  • Melt the milk chocolate in the microwave for about 40 seconds and stir until the chocolate is completely melted.
  • Set the bowl of melted chocolate aside.
  • While the chocolate cools a little, whip the cream to a light whipped cream.
  • When the cream begins to form soft peaks, add the condensed milk and melted chocolate and whip lightly for 2-3 minutes; then fold the mixture with a spatula until homogeneous, and pour it into a piping bag.
  • Take the chocolate shells out of the freezer.
  • Add some cooled caramel to each chocolate shell.
  • Finish filling the chocolate shells with the ice cream mixture, leaving space to seal the chocolate shells with melted chocolate.
  • Return the filled chocolate shells to the refrigerator for 1-2 hours until the ice cream has set.
  • Melt the remaining milk chocolate from earlier and stir out any lumps.
  • Take the frozen chocolate shells with ice cream and seal them with the melted chocolate. Remove any excess chocolate from the mold and place the chocolate shells back in the freezer overnight.
  • A delicious and easy ice snack on a hot summer day.
