Recipe for honey-glazed black salsify

Poor man’s asparagus – what exactly is that?? ??

You come across them occasionally in the supermarket. They’re typically the ones you look at and then put back on the shelf again. Because you’re not entirely sure what to do with it. Exactly!! The salsify…..

It’s not as troublesome as it looks, and it really tastes good. So go for it, what’s the worst that can happen?? ?

Honey-glazed with browned butter and hazelnuts


Servings: 2 persons

Honey-Glazed Black Salsify

Ingredients

  • 1 package Scorzone Roots
  • Water
  • Lemon Juice from 1 lemon
  • 42 gram Honey for the glazing
  • Butter for the glazing
  • Salt for the glazing
  • Hazelnuts toasted - a small handful
  • Fresh thyme a little

Instructions

  • The long stems are rinsed and scrubbed free of dirt.
  • Have a bowl with water and lemon juice ready.
  • The roots turn brown quickly when peeled.
  • Peel them now and place them in the water.
  • Cut them as you like and they are now ready to use.
  • There are many ways to prepare them, here is one of them:
  • Give them a quick boil in the water and let them simmer for about 5 minutes.
  • Turn off the heat and let them sit in the water for about 15 minutes.
  • Now glaze them in a pan with honey, browned butter, and a little salt until they are beautifully golden and the glaze has coated the roots nicely.
  • Sprinkle with toasted hazelnuts and fresh thyme sprigs.
