
Recipe for homemade strawberry ice cream

Homemade Strawberry Ice Cream
Equipment
- 1 Ice Machine
Ingredients
- 500 gram Strawberry frozen or fresh, fresh ones are used here
- 250 gram Sugar
- 200 gram Strawberry fresh - for later
Ice mass:
- 2 pcs. Egg pasteurized
- 150 gram Sugar
- 1 tsp. Vanilla Powder or seeds from 1 vanilla pod
- 5 dl Whole Milk
- 2,5 dl Cream
Instructions
Strawberry Purée:
- Put 500 grams of strawberries and 250 grams of sugar in a pot and bring to a boil. Stir to prevent it from burning.
- Blend the strawberries into a purée.
- Cut the remaining 200 grams of strawberries into small pieces and mix them with the cooled purée.
- Refrigerate it. Can be made the day before.
Ice Cream Mixture:
- Whisk 2 eggs and 150 grams of sugar into a fluffy mixture.
- Add 1 tsp vanilla powder or seeds from 1 vanilla pod, 5 dl whole milk, and 2.5 dl cream. Whisk the mixture until it is fully combined.
- Add 2/3 of the strawberry purée and mix well.
- Pour the ice cream mixture into an ice cream maker. If the mixture does not fit in the ice cream maker, you can split it into 2 portions.
- When the ice cream mixture is done, place it in a freezer-safe container. Pour the remaining strawberry purée over the ice cream and swirl, so you can see the strawberry streaks.
