Ingredients

Donuts

  • 25 gram Yeast
  • 250 gram Whole Milk room temperature
  • 85 gram Cane Sugar
  • 1 pcs. Egg room temperature
  • 75 gram Butter soft, in cubes
  • 4 gram Vanilla Sugar
  • 7 gram Salt
  • 390 gram Wheat Flour add an extra 0.5 dl if the dough hasn't set

In addition

  • 1.5 l Oil neutral, for frying
  • Sugar for coating

Instructions

  • Warm the milk in a pot, just heat it gently. Then pour the milk into a clean bowl or the bowl of your stand mixer.
  • Add the yeast and stir until dissolved.
  • Mix in the remaining ingredients and knead your dough for 10 minutes on medium speed in your stand mixer. When the dough releases, it is perfect. You should be able to handle it.
  • If you are using your hands, it will require some good muscle (you can optionally add the last 0.5 dl of flour if you haven't used enough).
  • The dough becomes very light, shiny, and delicious and easy to handle.
  • Roll out the dough on a floured surface until it is about 1 ½ cm in height. Cut out your donuts with a cutter and then cut out the holes with a smaller cutter, I used the end of a piping nozzle.
  • Place them on a baking tray with parchment paper, cover them with a dish towel, and let them rise for 3 hours until they have doubled in size.
  • Heat the oil in a large pot to 170 degrees Celsius (338 degrees Fahrenheit) (use a thermometer to measure). Carefully place the donuts in the pot – you can cook 2-3 at a time depending on space. They need some space.
  • Turn each donut in the oil with a spoon and cook for about 1-2 minutes on each side.
  • Remove the finished donuts with a slotted spoon and let them drain on a rack or on kitchen paper on a tray.
  • Then coat them in sugar and let them cool slightly. If they are to be decorated with icing, let them cool completely.
  • Enjoy your meal.
