Danish strawberries with burnt sabayon sauce ?

This time with a delicious dessert sauce for beautiful red Danish strawberries.

Equipment
- Saucepan
- Gas Burner
Ingredients
- Strawberry
Sauce Sabayonne
- 50 gram Powdered Sugar
- 2 pcs. Egg Yolk
- 100 gram White Wine or sparkling wine or dessert wine
Instructions
- Mix powdered sugar with 2 egg yolks in a saucepan. Add white wine. Whisk everything over medium heat. Whisk, whisk, whisk until the sauce begins to thicken. It takes about 5 minutes. The sauce is ready when it has come together, when you no longer see the bottom of the saucepan, and when you can feel the whisk marks in the sauce. Pour it over your strawberries or other berries or fruits and burn the sauce with a blowtorch. Bon appétit...?
Notes
The sauce can be flavored with vanilla or chopped mint.
You can serve the sauce warm, but also cold. If you want to serve it cold, it's a good idea to whisk it until cool. I usually place the pot in the kitchen sink with cold water and whisk the sauce until it is cool. It can then easily keep until the next day in the fridge. ????
If you don't have a blowtorch available, just skip burning the sauce. ?
