Recipe for croissant with chicken salad and asparagus

There is nothing as delicate as a homemade chicken salad, and once you’ve tasted the homemade version, you will never go back to the store-bought one.

Croissant with chicken salad and asparagus

Ingredients

  • 4 pcs. Chicken Breast
  • 250 gram Mushroom
  • 1 can Asparagus Slices
  • 200 gram Sour Cream can be replaced with Greek yogurt or a similar fermented product.
  • 95 gram Mayonnaise
  • 2 gram Curry
  • 5 gram Mustard dijon mustard
  • Lemon Juice
  • Salt
  • Pepper
  • 4 pcs. Croissant from the bakery, unsweetened
  • 4 pcs. Asparagus green
  • 8 pcs. Tomato cherry tomatoes

Instructions

  • Chicken Salad:

  • Place the chicken meat in a pot with water and simmer for approximately 12 minutes. Drain the water and cool the meat before cutting it into small pieces. Set it aside.
  • Clean and quarter the mushrooms, sauté them in a bit of oil in a hot pan until golden. Season with salt and pepper. Drain the asparagus in a colander.
  • Mix crème fraîche with mayonnaise, curry, and mustard. Fold in the chicken, mushrooms, and asparagus. Season to taste with salt, pepper, and lemon juice.

  • Assembly:

  • Cut the woody ends off the green asparagus and steam them briefly in lightly salted water for about 2 minutes. Quickly rinse them in cold water to retain their green color.  
  • Quarter the cherry tomatoes.
  • Slice the croissants open and fill them with the chicken salad. Garnish with asparagus and tomatoes.
  • Serve immediately.

Notes

Tip: As with all other recipes using boiled chicken, this recipe is naturally best if you boil an entire chicken or just chicken thighs. 
An entire chicken, of course, provides more meat and thus allows for using the meat in new recipes in the following days, but the advantage of chicken thighs is that they require less boiling time and yield just the amount of meat you need right now - which can be nice if you're the spontaneous type who doesn't plan your meals several days ahead.
