If you have leftover cooked chicken, for example after making chicken noodle soup, it’s a great idea to use the cooked meat in a delicious, homemade chicken salad.
Ingredients
- 250 gram Sour Cream
- 95 gram Mayonnaise
- Curry
- Salt
- Pepper
- 250 gram Mushroom can be replaced with canned mushrooms
- Butter for frying
- 250 gram Chicken meat from about 1/2 cooked chicken, picked into smaller pieces
Instructions
- Mix all the ingredients for the dressing together and season to taste.
- Clean the mushrooms, slice or quarter them, and fry them in butter in a hot pan until golden and crispy.
- Let them cool slightly.
- Fold the mushrooms and chicken meat into the dressing and taste again – maybe adjust the amount of salt or curry.
- Serve, for instance, on rye bread with slices of red bell pepper and a sprinkle of chopped scallions.
