Recipe for blueberry pancakes

Blueberry pancakes are a sure hit among both adults and children – they taste heavenly, are easy to prepare, and don’t require advanced culinary skills in the kitchen.

Here you get a recipe that is straightforward – and it’s also easy to adapt if you don’t have all the ingredients on hand. Try, for example, with bananas instead of blueberries or the children’s fruit yogurt instead of buttermilk – whatever you have in the fridge. Get the kids involved in the kitchen and experiment, and most importantly, taste as you go!

Blueberry pancakes are perfect for a good brunch or as a cozy weekend dessert. Enjoy!

Blueberry Pancakes

Ingredients

  • 1 pcs. Egg
  • 4.8 gram Baking Soda
  • 103 gram Buttermilk dairy product
  • 1 pcs. Vanilla Pod
  • 12.5 gram Sugar
  • Butter for frying
  • Blueberry a small tray
  • Maple Syrup for serving
  • Greek Yoghurt for serving

Instructions

  • Stir eggs, baking powder, buttermilk, vanilla bean, and sugar together in a bowl. The batter should be smooth and without lumps. 
  • Gently fold the blueberries into the batter. 
  • Heat a large pan and melt butter on it. Drop spoonfuls of batter onto the pan, and fry them for a couple of minutes on each side.
  • Serve the blueberry pancakes warm with the remaining fresh blueberries, syrup, and Greek yogurt. You can serve the blueberry pancakes with any toppings you desire - try, for example, fresh banana, some chopped chocolate, or homemade jam. 
  • They are perfect for the brunch table on a Sunday morning, as a dessert, or a delicious afternoon snack.
