
Recipe for beef culotte in the oven
Delicious oven-roasted beef culotte served with fries, homemade Béarnaise sauce, and bacon-wrapped asparagus.
We love beef culotte at home, and this method of preparation is a sure hit every time.
We don’t eat much sauce at home, so you might want to double the Béarnaise sauce ingredients if you consume a more “normal” amount.

Beef Culotte in the Oven

Ingredients
Beef Coulotte
- 1000 gram Beef Coulotte
- Salt and Pepper
French Fries
- 1 package French Fries
- Salt
Asparagus with bacon
- 1 bunch Asparagus fresh
- 1 package Bacon sliced
Homemade béarnaise sauce
- 50 gram White Wine Vinegar
- 50 gram Water
- 3-4 ribs Tarragon
- 1 pcs. Shallots
- 125 gram Butter
- 2 pcs. Egg Yolk
- Salt and Pepper
- Lemon Juice
Instructions
Beef Culotte
- Remove the beef culotte from its packaging and leave it covered at room temperature for 20 minutes.
- Preheat the oven to 225 degrees Celsius (437 degrees Fahrenheit).
- Score the culotte and season it with salt and pepper.
- Sear the culotte at high heat for 30-60 seconds on each side.
- Place the culotte in the oven at 225 degrees Celsius (437 degrees Fahrenheit) for 15 minutes.
- Then reduce the temperature to 160 degrees Celsius (320 degrees Fahrenheit) and continue roasting for 30 minutes.
- Remove the culotte from the oven and let it rest for 20 minutes before carving.
- Carve the culotte. Cut thin slices with a sharp knife.
- Cut across the grain. When you are about halfway through, turn the roast a quarter turn and continue carving.
Fries
- Prepare the fries according to the instructions on the package.
- Season with salt.
Asparagus with Bacon
- Rinse the asparagus and snap off the ends.
- Cut the asparagus in half.
- Take 2 half asparagus and wrap a slice of bacon around them.
- Place the asparagus in the oven at 160-200 degrees Celsius (320-392 degrees Fahrenheit) for 35-45 minutes, depending on their size.
Homemade Bearnaise Sauce
- Finely chop the shallot and put it in a small pot along with white wine vinegar, water, and tarragon.
- Boil over medium heat until about half of the liquid remains.
- Strain the liquid to make it clear and set it aside.
- Melt the butter in a new pot over medium heat.
- Once the butter is completely melted, turn off the heat and let it stand for about 2 minutes.
- Then pour the butter into a small bowl or jug.
- Break 2 egg yolks into a bowl.
- Turn on the stove to medium heat. Pour the clear liquid and egg yolks into a pot and whisk until airy. It's important not to stop whisking from this point on.
- When the mixture starts to warm up, it will thicken slightly. When it does, add 1 tablespoon of butter at a time until all the butter is incorporated.
- Season to taste with salt, pepper, and optionally, lemon juice.
- Serve immediately.

When carving, cut across the muscle fibers into thin, uniform slices. This makes the meat easier to cut and chew:
