Banana Pancakes

Ingredients

  • 70 gram Ripe Banana Equivalent to about half a banana
  • 4 gram Baking Soda
  • 4 gram Vanilla Sugar
  • 100 gram Wheat Flour
  • 1 pcs. Egg
  • 100 gram Milk
  • 0.5 gram Salt
  • 10 gram Butter For frying

Instructions

  • Mash the banana together with salt, vanilla sugar, and baking powder. Preferably use a whisk.
  • Stir the eggs and milk into the banana and add the flour gradually.
  • Set the batter aside.
  • Heat a frying pan, add butter and let it melt (turn golden).
  • Pour the butter into the batter and mix well with a whisk.
  • Place dollops of batter on the hot frying pan with a tablespoon and flip them when the top of the pancake starts to form air bubbles. They should be firm on top but must not burn.
  • Flip the pancakes and finish baking them.

Notes

If the pancakes are not to be used immediately, you can advantageously let them cool on a cooling rack, pack them in a plastic container, and refrigerate them until needed.
When reheating the pancakes, place them on a baking sheet and give them 10-15 minutes at 100 degrees Celsius (212 degrees Fahrenheit) with fan (convection).
