Banana Cake with Chocolate Chips

Like most people, I absolutely love everything sweet, and of course, I am crazy about chocolate cake and chocolate muffins.

Now, I happened to have some bananas lying around that had definitely seen better days. I could have chosen to use the bananas to make juicy banana pancakes or bake some delicious, healthy blueberry/banana muffins.

But I craved something different… BANANA CAKE!

And banana cake is something we can all agree is absolutely fantastic! It’s sweet, moist, spongy… and also perfect when the bananas are a bit too ripe. And yes, the bananas need to be REALLY ripe when used for banana cake – preferably overripe!

And in my world, a perfect banana cake MUST have chocolate chunks.

I surfed around a bit to find inspiration and stumbled upon a recipe that inspired me. However, I decided to add extra banana and chocolate because you can never have too much of either! ?

It was also partly to experiment with how much banana and chocolate you can actually “get away with” using – and my conclusion was that next time, I will try using EVEN more banana and chocolate!

Banana cake can EASILY be made a couple of days in advance. It shouldn’t sit for more than 3 days, but honestly, who can wait that long? ?

Ingredients

Banana cake with chocolate pieces

  • 4 pcs. Egg
  • 210 gram Sugar
  • 130 gram Wheat Flour
  • 6 pcs. Banana overripe preferred
  • 150 gram Butter
  • 100 gram Chopped chocolate or from a bar
  • 5 gram Baking Soda
  • 3 gram Salt fine/table salt

  • 100 gram Chopped chocolate dark
  • 25 gram Butter

Instructions

Banana Cake with Chocolate Chips

  • Put the butter in a pot and place it on the stove.
  • Turn on the stove and let the butter melt.
  • Remove the pot from the heat and let the butter cool.
  • Find a bowl and a hand mixer.
  • Place the eggs and sugar in the bowl, and whisk them until light and fluffy.
  • Find a new bowl and add the flour, salt, and baking powder to it, then mix the three ingredients together. Locate a sieve and sift the dry mixture into the bowl with the egg mixture. Fold it together gently.
  • Then fold the cooled, melted butter into the cake mixture.
  • Find a plate and place the bananas on it.
  • Mash the bananas with a fork.
  • Add the chocolate chips into the cake mixture along with the mashed bananas. You can also chop the chocolate yourself - this way you can make the chocolate pieces exactly the size you prefer. Personally, I find it quite convenient to buy chocolate chips, and the size suits me just fine.
  • Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
  • Find a springform pan. My springform pan is 24 cm.
  • Place a piece of parchment paper at the bottom of the springform pan. I trimmed the parchment paper so that it only covered the bottom of the pan. Grease the sides of the springform pan with a bit of butter on a piece of kitchen paper.
  • Pour the cake batter into the springform pan.
  • Place the cake in the preheated oven. Let it bake for about 50 minutes. The baking time depends on both your oven and your cake pan, but remember, the cake is meant to be on the moist side! Take the finished banana cake out of the oven and let it cool on a rack. In the meantime, prepare the chocolate coating for your banana cake.

Chocolate Coating with Sugar Sprinkles

  • Put the chocolate chips in a bowl that can go in the microwave. If you're using chocolate from a bar, simply break the chocolate into larger pieces and place them in the bowl.
  • Add butter to the bowl.
  • Place the bowl in the microwave and press "Start".
  • Let the chocolate and butter melt. You might want to open the door occasionally to stir the mixture.
  • Take the bowl out of the microwave.
  • Spread the chocolate mixture over the cooled banana cake.
  • Sprinkle sugar decorations on top of the cake.
  • Let the banana cake sit for a while until the chocolate hardens.
