French chef Joël Robuchon, who held an astonishing 31 Michelin stars, revealed the secret that made his mashed potatoes world-famous.

Robuchon’s secret lies in the ratios. The butter and milk should each equal half the weight of the potatoes.
For 1 kilogram of potatoes, you’ll need 250 g of cold unsalted butter and 250 ml of hot milk.
It sounds indulgent, but that’s exactly what makes the texture irresistibly smooth and rich.


The Power of Technique

Robuchon’s method includes two key techniques:
– Boil the potatoes with their skins on to preserve flavor and starch.
– Press through a fine sieve or ricer for a silky, lump-free finish.
Together, these create that signature velvety texture.

– 1 kg Le Ratte potatoes (or Yukon Gold, Maris Piper, Russet)
– 250 g cold unsalted butter, cubed
– 250 ml hot milk
– Sea salt to taste
Le Ratte potatoes are ideal thanks to their creamy, dense flesh that yields perfectly smooth mash.

Place the unpeeled potatoes in a pot of cold, salted water.
Bring to a simmer and cook for about 30 minutes, until tender when pierced with a knife.
Drain, then let them cool slightly. They should remain warm when peeled.


Step Two: Peel While Warm

Cut a shallow slit along each potato and gently remove the peel while holding it with a paper towel.
Peeling warm potatoes preserves their natural starch and keeps them from absorbing excess water.

Use a potato ricer or fine sieve to mash the potatoes directly into a warm pan over low heat.
Avoid using a blender or food processor, overworking the starch will make the mash gluey, not silky.
